The Vegan philosophy is one of respect for animals and compassion for the wider world, so a vegan diet excludes animal products including eggs, dairy produce, honey or gelatine (a gelling agent derived from skin, bones and connective tissues). Materials such as leather, silk, fur or wool are also avoided, for example in clothing or furniture. Veganism has recently gained increasing popularity with younger people, perhaps due to the widespread interest in healthy eating, easy access to recipes online and the increasing availability of vegan food products and menu options at restaurants.
